This incredible wine is a predominantly Chardonnay constructed blend alongside a small proportion of the traditional local Grechetto grape. With its debut vintage in 1985, the Cervaro was conceived to be an age-worthy white wine which would reflect its origins in the Umbrian countryside close to the Tuscan border. One of the first Italian white wines to utilise the benefits of Malolactic fermentation, a process which contributes rich and creamy character by converting tart tasting Malic acid into the softer Lactic acid, this is a truly seminal wine. A harmonious blend of refreshing peach, citrus and apple blossom on the nose is married with luxurious buttery depth and sweet spice including vanilla leading to an incredibly long and elegant finish which just keeps on evolving.
